You'll start back in the prison cell, and all the level layouts, weapons and the location of enemies and treasures will be different. Of course no matter how well you're doing you will die at some point, and all that stuff will disappear. You won't always get the gear you want, but there's usually a style you can adapt that makes perfect use of what you find.
